Jurancon Symphonie de Novembre - 37.5cl, Domaine Cauhapé
Description
100% Gros Manseng, this wine is prized for its high acidity which gives these historic sweet wines their lovely balance. The grapes are left on the vine until November, allowing them to dry and shrivel, thereby concentrating the sugars. Yields are extremely low, and after whole bunch fermentation in old French oak barriques, the wine is then aged for 10 months in oak before bottling. With aromas of honey, tropical fruit and cherry blossom, this is luscious on the palate with superb balancing acidity.
