U Passimiento

Description

A blend of 70% Nero d'Avola and 30% Frappato. The Nero d'Avola fruit is left on the vines and is harvested late so as to allow a light withering and for natural dehydration to take place. After a soft pressing, the the grapes are fermented separately and then slowly blended. The natural sweetness of the wine is obtained by interrupting the fermentation through the cold process, and the wine is then matured in steel tanks for some months before bottling. Warm and full-bodied on the palate, this wine is smooth and harmonious with rich fruit and elegant tannins. Produced organically.

Baglio Gibellina is situated in picturesque Sicily where its vineyards are surrounded by the hills of Salemi and Santa Ninfa. Old vineyards located between 300-600m above sea level are grown on a mixture of clay and volcanic soils with limited yields allowing for the production of outstanding wines with incredible food matching potential.
