Finished in first fill Bourbon and refill hogsheads. The nose is earthy and malty, with cooked apples, honey and rhubarb mixing with autumn leaves and hint of ash to form a complex, diverse nose. On the palate it is rounded and oily with an earthy quality, as rhubarb, honey, vanilla and apple strudel are joined by woodspice and a touch of smoke. On the finish it is fresh and full, ending on lemon drops, rhubarb & custard.
